1，中国美食烹饪方法？

溜：溜菜需两步完成。第一步先将挂糊或上浆原料用中等油温炸过；第二步将芡汁调料等放入锅内，倒入炸好的原料，颠翻出锅。溜菜具有香脆、鲜嫩、滑软等特点。一般在第二步溜炒时宜用旺火，快速翻炒出锅。常见菜肴有“焦溜肉片”、“醋溜白菜”。

焖：是把主料先过油后炸至半熟，再加汤用文火焖至熟烂的烹制法，特点是软烂不腻。如“黄焖鸡块”、“油焖大虾”。

汆：汆是用生料加工调味后，放开水锅中煮熟的方法。氽菜简单易做，重在调味。一般用鸡汤、骨肉汤，同时加入配料增味。特点是清淡、爽口。有菜有汤，适宜冬季适用。如“汆丸子”。

蒸：是将生料或半熟原料，加调料调味后上笼屉蒸熟的方法。蒸分清蒸、干蒸和粉蒸。原汁原味，形状完整，质地鲜嫩。如“清蒸鸡块”、“粉蒸肉”。

炸：将主料挂糊或不挂糊下热油锅，由生炸熟的方法，外焦里嫩。如“干炸里脊”、“软炸虾仁”等。

酥：先将原料下锅煮熟或蒸熟再用油炸至香酥的方法，特点是外焦脆，里嫩软、鲜香可口。如“香酥鸡”、“香酥肉”。

烩：是将原料油炸或煮熟后改刀，放入锅内加辅料、调料、高汤烩制的方法。有香嫩、鲜的特点。烩制方法简单，要注意火候，一般用中火使汤收浓。常见有“烩三鲜”、“烩鸡丝”。

扒：是锅底加油烧熟，炒锅加汤，放入主料及调料，用文火扒烂，勾芡收汁的烹制法。鲜软，汁浓，易消化。常见的有“扒三鲜”等。

炖：此法比较多见，方法简便，是先将主料切块煸炒，再兑入汤汁，用文火慢煮的方法。特点是有汤有菜，菜软烂，汤清香。如“清炖鸡”。

爆：是旺火热油，原料下锅后快速操作。要求刀工处理粗细一致，烹前备好调味品，动作要麻利迅速。如“葱爆羊肉”、“酱爆鸡丁”等。

炒：是指锅内放油，油烧熟，下生料炒熟。一般用旺火快炒，以减少菜的维生素损失。炒肉一般用中火。

砂锅：将原料加工后，装入砂锅中，调入作料、配料，用文火慢慢煨炖至熟烂，营养丰富。如“砂锅豆腐”、“砂锅鸡”。 拔丝：是将糖加沙(或油)熬成糖棉后挂上主料的方法。拔丝菜要有丝，有口味香甜腻的特点，属技术菜，重在掌握炒糖稀。老了发黑不行，嫩了色泽浅拔不起丝也不行。要掌握火候，操作要快。有“拔丝菜果”、“拔丝山药”等。

话说本人是由《交响情人梦》（超喜欢~！）起步的日剧迷，虽然看日剧时间不算很长，但还是有所收获的~希望你能找到自己喜欢的日剧~！加油~！

以下是本人根据自身所看日剧做出的一些总结性的经典日剧的推荐~希望能有所帮助~

NO.1_《交响情人梦》(05)，非常好看~！收视率也很高，十分经典的日剧哦，年代也不久远，讲古典音乐的故事，剧情很搞笑，人物很有特色~！还可以学到不少的东西，本人看过之后就变成古典音乐迷了……真的是非常好看的日剧哦~！

NO.2_《Boss》(09)，(天海佑希，竹野内丰，玉山铁二，户田惠梨香，吉濑美智子)最近完结的作品，讲警察特别搜查科的故事，大牌很多，故事也很不错，笑点不少，制作精良，可与《交响》媲美的作品~！

NO.3_《Mr.Brain》(09)，木村拓哉挑大梁（很气派~）演绎头脑很棒但有点半吊子的脑科研究员，其助手由绫濑遥担当，带一点侦查破案的味道，很好看，客串的演员都相当的大牌哦~（龟梨和也，相武纱季，仲间由纪惠，Gackt，志田来未）总之是一部很棒的作品，看了就无法停下来，想要看到底的好剧哦~！

NO.4_《神探伽利略》（07），福山雅治和柴崎幸搭档，演绎古怪科学家和女警察一起破案的故事，音乐很棒，犯罪手法奇特，可以学到不少东西，是由东野圭吾的原著改编而来，相当值得一看哦~！

NO.5_《爱情洗牌》又名《旋爱》(09)，千秋SAMA玉木宏倾情演出~虽然是野岛伸司的剧本，但是个Happy Ending，很好看，大牌也不少，讲都市里几对男女在爱情的旋转中寻找自我与真爱的故事，剧情也蛮搞笑的~强烈推介~！玉木宏在里面帅呆了~！也很可爱哦~！

NO.6_《没有蔷薇的花店》（08），汐见英治独自抚养一个女儿雫，拼命工作好不容易用攒的钱开了一家小花店。在这样的英治的面前某个雨天，出现了倾国倾城的女性白户美樱。在汐见父女周围，正义感强烈的雫的班主任小野优贵，父女原先居住的地方的工藤直哉，暗恋优贵的咖啡店店主四条健吾，十分理解父女的菱田桂子等人的介入，甚至连神秘大医院院长安西辉夫也影响着汐见的人生。很励志的故事，演员也很不错，而且是野岛伸司的剧本，很经典哦~！

NO.7_《白夜行》（06），"纯洁的爱情是什么呢 ?"要是被问了这样的问题,大家怎么回答呢?回答一定是因人而异吧,但是觉得哪个是正确的呢？以发售55万部而闻名的东野圭吾氏纪念碑名作《白夜行》是关於有着悲惨命运的少年少女的故事。年幼时候，为了帮助初恋的少女而杀害了父亲的少年和为了保护少年而亲手杀害母亲的少女，在之后的14年里，相互扶持一起生活的故事。奉献着全部人生的少年和一直接受这全部的少女。这叫爱，那么到底什么叫爱呢？由山田孝之、绫濑遥这对黄金搭档诠释这有着相当残酷、孤独、单纯灵魂的两人14年来爱的奇迹。两个人只是想在太阳下牵手散步而已…

NO.8_《医龙》(05)，讲医疗的，跟《交响》是同时期播放的，收视率很高哦~如果想对医疗有所了解或有兴趣的话，值得一看哦~是一部不错的经典医疗剧~！虽然后来出了同是医疗题材的山下智久主演的《code blue》，但是完全不能相提并论~！后者明显无聊很多，第二季也不了了之。

NO.9_《流星之畔》（08）也值得一看，二宫和也+锦户亮+户田惠梨香，演员很强大，故事比较搞笑，也是由东野圭吾的作品改编，不过由于是工藤官九郎担当的编剧，肯能会对剧中夸大痛苦来提醒幸福的手法有所反感，总的来说是一部不错的剧~

NO.10_最后推荐一部比较难下到的，只有日菁字幕组的翻译，叫《坏家伙们》(07)，是由著名侦探小说家松本清张的原著改编的，讲医院院长与他的情妇们纠缠不清的故事，至今对故事的结局耿耿于怀~是一部很特别的作品哦~！
